Paul Malvone

Paul Malvone is the Co-owner and executive chef for Boston Burger Company. He and his two friends and co-owners opened BBC’s first location 12 years ago in Davis Square, Sommerville. They have since expanded into Boston, Cambridge, Salem, Massachusetts. Along with the 4 restaurants, Boston Burger Company has a food truck, catering division, and a retail line of homemade salsas. They also ship some of their products around the country.

Paul began cooking around the age of 19 and hasn’t stopped. He took a short break to pursue an alternate career in the Postal Service but quickly realized his passion was in the restaurant. Over the years he has been featured on the Phantom Gourmet TV show, won the battle of the burger in Boston, Best burger on the Rachael Ray show and Winner of the DDD Burger Battle on Guys Grocery Games. He has also been featured on Diners Drive-ins and Dives (check it out here), Man vs. Food, Food Paradise and Beat Bobby Flay. Paul has also competed at the South beach Wine & Food Festival against Celebrity Chefs Bobby Flay, Michael Symon, Guy Fieri and other top chefs from around the country.

Schweid & Sons Fresh Certified Angus Beef Patty
Bacon
Sweet Potato Fries
Homemade 1000 Island
Diced Pickles
Jalapeños
Red Onion
Shredded Lettuce
American Cheese

Directions

1. Cook Bacon and set aside.
2. Prep shredded lettuce, diced pickles, and sliced red onions.
3. To the 1000 island sauce, add the pickles, jalapenos, red onion and bacon – this is the hot mess sauce.
4. Cook the Schweid & Sons Burger patty to your desired doneness.
5. Cook the sweet potato fries
6. Toast your buns.
7. Burger build from bottom up: Bun, Burger Patty with American Cheese, the hot mess sauce, shredded lettuce, sweet potato fires, and some more thousand island on the top, top bun.
